Meal Planning Monday: 4 Weekly Staples for Easy Meal Planning

I'm new to this whole eating clean, meal planning business. In college, most of my meals came from the dining hall or the sorority kitchen - the rest came from Pizza Xpress or Jimmy Johns. My senior year of college I started to make food on my own but I mostly survived on eggs and prepackaged meals and snacks. Growing up we didn't do a lot of cooking either - it was just my mom and I. She worked hard and I was busy with my activities - many of our meals were in restaurants and boxes.



My point is, I'm still learning to cook and bake well. Our meals are simple. No four course dinners here! Still, I really enjoy cooking and learning new recipes and I try to add a new recipe to my repetoire every week.

In order to stick to our newlywed/med student budget and eat healthy, I rely on a few simple staples to get us through breakfast and lunch for the week - sometimes dinner if I'm feeling lazy or we have a lot of leftovers.

The following are NOT fancy recipes that should be featured on Pinterest but rather a quick guide on how I keep us fed and watered on a budget. 

1. Breakfast Cassarole 
We eat A LOT of eggs in our house! They are cheap, full of nutrients, and keep me full until lunch time. Cooking eggs is certainly less convienent than pouring a bowl of cereal - especially if I'm pressed for time. That's why I started baking an egg cassarole ahead of time so that all I have to do is pop it in the microwave and top with salsa or avocado! It's a super simple recipe that you can customize however you please!

                                    
 


Depending on what ingredients you add and how big your serving size is, you can get this for 150-200 calories typically. Add some avocado, salsa, hot sauce, etc. and a piece of fruit (LOVE prunes) and you have an awesome breakfast that will fill you up 'til lunch! Lots of protein, low carb if you skip potatoes, and a great way to sneak your veggies in!

2. Roasted Vegetables
I hesitate to even label this as a recipe but roasted veggies are a staple in our house - I like to make them in big batches and reheat them later - some people might not like that but the texture and flavor is just fine to me. Name a veggie and you can roast it - drizzle with a little olive oil and season to taste. I try to limit the amount of salt I use - instead use Mrs. Dash, fresh italian herbs, pepper, etc.

I love asparagus! Paired with chicken and orzo, potatoes, and squash.

Roasted broccoli and sweet potatoes with a turkey burger.

This one is really a no brainer - I typically roasted on 400 degrees for 20-40 minutes depending on the type of veggie. Just monitor them until golden brown. You can even throw them into your breakfast casserole, meatloaf, or a variety of other recipes!

3. Turkey Meatloaf Muffins
I introduced the recipe I use (from Jamie Eason) HERE. I LOVE LOVE LOVE these! Lately I've been experimenting with different veggies and toppings. Right now, I love topping the muffins with a little sauerkraut and spicy mustard. Is that super weird? Probably but it's delish.

I like to freeze half of the batch (typically yield 18 muffins) so I don't have to eat them all at once.


Everything I eat is covered in hot sauce/salsa. Quinoa, turkey muffin, and broccoli.

4. Salsa Chicken
Another no brainer recipe that is PERFECT for so many meals - I make a batch in my crockpot and then freeze half of it.

The recipe is simple. Chicken breast & salsa. BAM! Cook on low for 8 hours (or high for 4 hrs), shred, and die of happiness.


Salsa chicken is AWESOME in tacos, salads, paired with veggies and rice, in eggs, etc. Just do it - it's the easiest thing ever.


To add a little variety and flavor, I just change the salsa - medium, hot, salsa verde, etc. If I don't want that salsa taste, I season it with whatever sounds good and add low sodium chicken or vegetable broth. 

I imagine you could also do this with turkey breast or another similar meat. Just change it up.

1.5 weeks of school left and then I'll be a normal human and able to update you all about my life! 4 more exams to go - two written, one practical, and one OSCE (playing doctor for a grade). So far, I've passed THREE classes in med school - three more to go! 

Weigh in today: a measly 0.2 pounds! Whenever I have an exam on Monday, I never get workouts in and I've been eating less than stellar. A certain roommate (along with our two friends) convinced me to grab Taco Bell last night after we got our Hematology Exam grades back (I actually did a lot better than my previous exam...and I studied less! Weird.). I can't wait to get a few weeks off to reset and work on creating better habits. 

The goal these last few weeks is to maintain, maintain, maintain! If I can just get through the holidays and exam week without gaining and making the best choices possible, I'll be happy.  


Some updates on the wedding planning front. Nick and I finally took our engagement pictures after having to postpone them twice because of weather. On Friday it snowed so we had beautifully snowy pictures on Saturday. Hopefully we will get them back soon and I'll share! I hope they turned out well...Nick and I both hate getting our photos taken.

I have a bunch of appointments set up over Winter Break to meet with photographers, caterers, DJs, etc. so I'm counting on break to do the bulk of the planning since we have less than 7 months to go! 

I'm going dress shopping on Dec. 30!

I'm doing something completely out of character today - I wrote this post on Tuesday instead of 5 minutes before anatomy lecture like most Wednesdays. That said, the code box still doesn't work so add that to my list of offenses in the blogging word.

To say my life has been a whirlwind would be an understatement - I'm floating in the middle of the ocean, trying to keep my head above water and I only took a week of swim lessons. Yeah...something like that. 

I knew med school was going to be hard. 
I knew I was going to be tired and I knew what to expect based on what other people said but knowing what to expect and actually experiencing something are two totally different things. 

I find myself cycling between intense emotions of love and hate with school - 
I hate that I don't have time to do a lot of the things I love
I hate that I can't see my family and friends
I hate that I don't feel like I can give 100% to all the areas of my life. 
But...
I love learning! 
I love being (somewhat) knowledgable about the human body. 
I love that my classmates have already become a family
I love how freaking cool medicine and science are! 
Most of all, I love that I am finally taking real steps towards being a physician.

At the end of the day, I have to remind myself that I chose this life. If I didn't want to put the time and energy in, I shouldn't have chosen this profession. 

The next month is going to be hellish - the Monday after Thanksgiving I have two exams (Anatomy and Hematology). The next Monday I have a Heme final and my final for Intro to Clinical Medicine (history and physical on a standardized patient). The last week I have an OMM written, practical, and Skeletal Muscle final. So - 7 exams in three weeks. I die. (I'll update you all on school later this week - I will blog!)

Anyway, weigh in things. I've been pretty bad at keeping track of things lately. Being swamped is no excuse but weight loss just hasn't been at the forefront of my mind. I'm hoping to get through the holiday season without gaining (maybe losing some) and then start fresh at the New Year with my mini marathon training. As of today, I'm still where I was last week. :/ 

Speaking of running...Thursday I will be running my very first 10K race in Cincinnati! At least I'm still working out a fair amount...

This past weekend I was a little concerned about being able to run 6.2 miles since I've never done it. I know you aren't supposed to do the full distance before a race (I never understood that...I can't just pull a mile out of nowhere without practicing first!) but something got ahold of me and I ended up doing 6.2 anyway! I planned to do 5 but I was in a groove so why not?

My left foot is still bothering me a little after long runs so I'm sure it will be a problem on Thursday but I'm doing it anyway. I think I just need to strengthen it since my left ankle has always been kind of lame. 



Oh, by the way,  it was FREEZING! Helpful hint - bring tissues when you run in the cold! I had to resort to using my glove as a tissue and it was nasty!

So Thanksgiving - I'm going home today, studying, running my 10K, going to Thanksgiving festivities and driving back to school Friday morning to study all weekend before my two exams. No time for wedding planning, no time for relaxation. It's going to be...thrilling. So let's do this!

To the person who asked last week, yes - I will still be updating but no, I'm not going to sacrifice study time to write. Passing classes >>> blog. Obviously I can't balance everything but I hope to catch up on EVERYTHING over Christmas Break!

Summer Kickoff Virtual 5K Link Up

Hey Popsicles!
Today I'm linking up with Kristine @ Heart Shaped Sweat for her virtual 5K.  She is just plain awesome and so inspiring! Go check her out, along with the other 5K participants!

You can read my blog post about my experience here.  This was my first official 5K. I don't count The Color Run or a local 5K I did in college. I didn't train or run those.  


I ended up with a time of 36:58 which was under my goal of 40:00 minutes. My pace was about 11:56 which included about 35% walking, 65% running - I didn't run the whole thing but that's my next goal.  Hopefully by my next race I can get under 11:30 min and run the whole time.  Small progress!

I was nervous before...so awkward selfie is warranted.
One reason I was able to get in under my original goals was because of my music and adrenaline!  I started out wayyyy too fast and burnt out despite all the advice I read about not doing that... 

Here's the playlist I used!  Some oldies and some goodies since I like a little mix of everything.  Kiss You by One Direction is my power song.  I don't know why...it just makes me run faster!

There's one song on here that you probably don't recognize.  This Is Indiana.  Shameless plug for my school...how can you watch this and not be an IU fan? 



I decided to make a new goal.  I'm going to run a race once a month for the rest of the year!  Here is my tentative plan.  If you will be running any of these or have other suggestions, let me know!  I'm so excited :)

upcoming 5K/10K races


These dates/races are subject to change. I tried to schedule around my exam schedule but a few of these occur right before or right after an exam so I may have to switch things around. I at least want to get a few more 5Ks in and definitely the Thanksgiving Day Race.  The rest will be extra!

So I guess you can say my first 5K experience was very positive since I want to keep going. Even though I'll probably never be some elite runner, I know I have a new hobby just for me that doesn't involve Netflix or copious amounts of glitter.

I'm only putting this up to prove I was there...I look disgusting. Sweaty gross hurr
I wasn't all that athletic growing up (hand-eye coordination is a foreign concept for me) so running and working out make me feel like an athlete.  I can train for something and actually see progress, even though I'm just in the beginning stages.

Who am I kidding, though?  I just want the T-Shirt...

******UPDATE*****

As per usual, after I got off work this morning, I took a little nappy and then did my weigh-in.  I'm down -2.4 lbs for a total of -10.8 lbs!  It's nothing big but considering my end of the week follies, not too shabby! If anyone follows me on Twitter (@prettystrongmed) or Instagram (hwhita), you'll know that I had to watch the season premiere of The Bachelorette with some Oliver Winery Sangria. What you may not know is I also spent it with some Dove peanut butter chocolate.  Whoops.
